How a Saturday Night Bite Became Sunday Brunch

I love a good fancy party. I would honestly live off hors d’oeuvres and champagne if it was at all healthy or socially acceptable. There always seem to be leftover ingredients when hosting a gathering so why not turn your Saturday night bites into a lovely brunch the next morning?

One of my favorite bites to make for a party is a simple cracker topped with smoked salmon, creme fraiche, caviar, and fresh dill. It hits all the notes. It’s smokey, creamy, and salty with a little crunch. Just perfect.

Sometimes I use my leftover party snacks as salad ingredients (a charcuterie salad is divine) but on this occasion I was really inspired to make a brunch salmon and eggs. I had some leftover French baguette from another dish that worked perfectly as the base. I toasted it lightly and gave it a good smear of herbed cream cheese before topping it with my leftover smoked salmon and an egg round which I made cute with a cookie cutter.

Now we needed a sauce. I whisked together a spoonful of my leftover creme fraiche with an equal part of lemon juice and a pinch of black pepper. After a good drizzle I added my caviar and fresh dill to the top. It was perfection.

I served this alongside some fresh fruit, my morning coffee and a glass of bubbles. It was the most amazing follow up to a night well spent with friends and great food!
